Green Tomatoes Pre-Roasted

My Mom came up for a visit this weekend with some kugel and brisket in tow. But like a typical jewish mother, she was concerned it wouldn’t be enough…Well it probably would have been, but with all of these green tomatoes and “american” cuisine winning the poll, I decided it was time for some chili! But the key to this flavorful 3 bean chili is a tip that can be used for much more…

The other big harvest from my garden was a bunch of poblano peppers. For those out there who hate green bell peppers, the poblano is perfect. They can bring a little heat but most importantly their flavor is head and shoulders above the “bells”. And roasting them is the only way to go. In a 450 degree oven, I roasted off the poblanos and the green tomatoes until just charred. A quick puree in the food processor with a squeeze of lime and a little honey creates a wonderful blend of flavors. At this point it is perfect as a sauce or even a salsa. But adding the mixture to sautéed onions, garlic and peppers with a few cans of white beans, red beans, and pinto beans made for an unbelievable green chili! Perfect with that kugel…

Judging Table

Last night we came home with some bruised egos and some extremely full stomachs but overall the Casserole Crazy cookoff was a ton of fun. There were a lot of great ideas and a ton of casseroles to try (28 entries). Although neither of our casseroles made it into the top three there was praise to go all around. I want to thank Emily Farris for putting the event on for now the fourth year. We can’t wait for next year….we’ve got some interesting ideas already. Check out some of the pictures from last night…

Blog Poll…Name our winning casserole

So tonight we worked on our casseroles for the casserole cook off set to take place in Greenpoint, Brooklyn at the Brooklyn Label Co, tomorrow night. Although we have no idea what to expect, having seen our final products we like our chances. We need your help though. Our second casserole is a chicken enchilada style casserole and when we finish it tomorrow night we are going to put a layer of nachos on top. We figure you either go big or go home. We are lacking a great name however, so we’d love it if you left a comment with your suggestions…if we end up using your name we’ll send you the recipe. We’ll let you know how we do!
