Smoked Pork Tacos

Here’s the deal. I’ve been known to make a mean pulled pork. In fact, low and slow cooking is one of my favorite approaches to food. And with certain cuts of meats like pork shoulder, short ribs, and brisket, this is the only way to go. But my pulled pork comes from the oven. Nicely seared with a homemade dry rub and dripping in a mix of apple cider vinegar and rendered fat. There’s no denying it’s delicious. But it ain’t smoked.

So when my buddy handed me a cold bag packed with some of his smoked pork shoulder, I was pretty damn ecstatic. Smoking meat provides a flavor that is almost indescribable. But we all know that flavor when we dig in, and it compliments the sweetness of the pork fantastically. Rather than dousing this pork in a sauce, I decided it was best left untouched wrapped nicely in this simple taco with sour cream, jalapeno, cabbage, and lime. We were in hog heaven!

Anyone else with a smoker looking for a friend?

    yes, I have a smoker buddy, we got one for our roof. So much smoking going on these days.

    The pork industry defends horrendous cruelty to animals — factory farmers keep breeding pigs locked in two-foot-wide crates where the pigs can’t even turn around for nearly their entire lives. Eight states have passed laws against this type of animal abuse, yet groups like the National Pork Producers Council still support it.
