Spring Reset Day 3: Feeling Great, Eating Ramen

I’ve got to admit, after one of the best night’s of sleep I’ve had in a while, I am feeling pretty damn good on Day 3 of the Spring Reset. Energy is high and so far, to be honest, it hasn’t been so bad without the dairy, meat, or wheat! But it’s still all about the food. Because when I told Em that I was whipping up a ramen dish to rival our favorite at Menkui Tei (which happens to be rich with porky goodness), neither of us were so convinced.

But after the first spoon full of this charred scallion and shitake ramen, we were pretty damn excited. The delicious broth was infused with¬†cardamom, star anise, shitake mushrooms, ginger, and charred scallions that added an almost pho like flavor profile. With a bit of tamari adding the salty kick all good ramens need and the rice noodles adding the substance, I still can’t believe how great this dish came out. And while perfectly cooked slices of pork or even better pork belly may have been fantastic additions, it wasn’t missed!

So has anyone out there joined the reset? The more the merrier!
